Chocolate Muffins - 183 Calories

In a large bowl, mix the erythritol, yoghurt, maple syrup, vanilla & egg white together until smooth

Pass the flour, cocoa powder, bicarbonate of soda and pinch of salt through a sieve into the bowl and use a spatula to mix everything together

Once well combined, add 60g of the chocolate chips and mix well

Lightly spray muffin mould with oil spray and divide the mixture between 4 muffins and top them with the remaining chocolate chips

Cook in a pre heated oven at 450 farenheit for 4 minutes, reduce the heat to 380 farenheit and cook for 12-13 minutes more or until the centre is cooked (you can insert a tooth pick and if it comes out clean it’s cooked)

Remove from the oven and leave the muffins to cool in the moulds for 5 minutes

Remove from the moulds and leave to cool on a cooling rack

Erythritol is a sugar substitute with 0 calories. You can buy it online (amazon for example) you could also use normal sugar instead but they’d be high in calories

Store the muffins in air tight containers or zip lock bags

For best results, heat for 15-20 seconds in the microwave before eating!
