Avocado Toast & Mushrooms

  • 1 egg
  • 100 grams mushrooms (cut into quarters )
  • 50 grams avocado
  • 25 grams bread (1 medium slice )
  • 10 grams butter (divided in 2)
  • lemon juice (to taste )
  • 1 dried chilli (optional )
  1. Fry mushrooms in half the butter for 2 minutes until browned, a little salt and the chilli, cook for 30 seconds more then set aside

  2. Meanwhile, crush the avocado in a bowl, add lemon juice and salt to taste

  3. Fry egg in remaining butter, season yolk with salt and pepper

  4. Whilst egg is cooking, toast the bread

  5. Serve the avocado on the toast & top with the mushrooms and egg

  • You could add another egg to increase proteinĀ
