Tuna & Sriracha Noodles – 523 Calories

  • 50g egg noodles
  • 90g courgettes, thinly sliced
  • 90g pepper, thinly sliced
  • 1 spring onion, thinly sliced
  • 1 clove garlic, minced
  • 20g sriracha
  • 2 tbsp soy sauce
  • 1/2 tsp ginger, minced
  • 1 tbsp sesame seeds, toasted
  • 130g tuna steak, cut into small cubes
  • 1 tbsp sesame oil (or peanut oil)
  • Chopped coriander, optional

Instructions

  1. Cook noodles in boiling salted water
  2. Heat oil in a large pan and fry the courgettes, peppers and spring onion for 2 minutes
  3. Add the garlic and ginger, cook for 30 seconds
  4. Push the vegetables to one side of the pan and add the tuna and cook for 1 minute
  5. Add the cooked noodles, 1/2 the toasted sesame seeds, soy sauce and sriracha, mix well and serve in a bowl with sesame seeds & coriander on top
