Tuna Carnita Tacos – 371 Calories

  • 130g fresh tuna, cut into cubes
  • 20g red onion, diced small
  • 80g pineapple, diced small
  • 80g cucumber, diced small
  • 10 mint leaves, finely shredded
  • Chopped chilli to taste, optional
  • 1 tostada, ground in breadcrumbs
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Lime juice to taste
  • 1 pump spray oil 
  • 2 corn tortillas
  • Hot sauce or fresh salsa, optional

Instructions

  1. In a small bowl, mix the onion and garlic powder with the tostada breadcrumbs and a little salt
  2. Add the tuna and mix well until well coated then spray lightly with oil
  3. Cook tuna in a pre heated air fryer at 450 fahrenheit for 6 minutes
  4. Meanwhile, combine the pineapple, cucumber, mint, chilli and lime juice in a bowl and season to taste with salt
  5. Warm the corn tortillas in a dry pan or comal
  6. Serve the tuna on the tortillas and top with the salsa, hot sauce and squeeze over some lime
