Thai Green Fish Curry – 455 Calories

Ingredients

Carbs: 20g | Protein: 33g | Fat: 27g

  • 130g seabass, in small pieces
  • 50g pepper, diced
  • 50g peas
  • 50g broccoli
  • 50g green beans
  • Tsp oil
For the sauce
  • Small handful coriander
  • 1/2 tsp ginger
  • 1/2 tsp lemongrass
  • 1 clove garlic
  • Habanero, to taste
  • 15g onion
  • 1 tbsp soy sauce
  • 250ml coconut milk, reduced fat

Instructions

  1. Add the sauce ingredients to a blender and blend until smooth
  2. Heat the oil in a small pot and fry the sauce for 30 seconds
  3. Add the peppers, broccoli & green beans and cook for a minute
  4. Add the fish and peas, cover with a lid and cook for 2-3 minutes
  5. Serve in a bowl with a squeeze of lime

NOTES

  • You can use more or less habanero depending on your taste
  • Fish could be swapped for your preferred protein choice
  • If you want more sauce, you can add a little chicken broth or extra coconut milk
  • You can eat as it is or with rice
