Strawberry Cheesecake – 252 Calories

  • 250g strawberries (fresh or frozen)
  • 1.5 tbsp 0 calorie maple syrup (or to taste)
  • 6 digestive biscuits, reduced fat (90g)
  • 150g Philadelphia cheese, reduced fat
  • 9g butter, melted
  • 1/2 tsp vanilla essence

  1. Blend the strawberries with the maple syrup & vanilla essence the bring to a boil and cook for a minute so it thickens up then leave to cool
  2. Blend biscuits in a blender until they’re crumbs, transfer to a bowl and add the melted butter and mix well
  3. Divide between 3 small bowls and use a spoon to press the biscuits so it has a firm base
  4. Blend the Philadelphia cheese and half the strawberry purée then divide between the 3 bowls
  5. Top with the remaining strawberry purée and a whole strawberry to garnish
  6. These are best served chilled
