Mexican Shakshuka – 438 Calories

  • 30 grams Mexican chorizo
  • 100 grams bell pepper, medium diced
  • 40 grams panela cheese, reduced fat, cut into small cubes
  • 1 medium egg
  • 300 grams tomatoes, diced
  • 15 grams chipotles in adobo sauce, or to taste
  • 1 tbsp coriander, finely chopped
  • 50 grams bread (1 small slice)

Instructions

  1. Fry chorizo in pan over a medium heat for 1 minute
  2. Add the peppers and fry for 1 minute until softened
  3. Meanwhile, blend the tomatoes and chipotles
  4. Add tomatoes to the pan and cook for a couple of minutes until the sauce thickens
  5. Add the cheese and make a space in the middle, add the egg, cover with a lid and cook over a medium heat until the egg is cooked to your liking (1-2 minutes)
  6. Sprinkle the coriander on top and serve the bread on the side

NOTES

  • To make this vegetarian, replace the chorizo with a soya sausage or your favourite vegetable (aubergine is a good option)
  • The chipotle is optional, you can add more or less if you prefer
  • You could use Spanish chorizo instead of Mexican
