Potato & Egg Hash – 495 Calories

Ingredients

  • 200g potato, cut into small cubes 
  • 80g bell pepper, diced
  • 50g spinach
  • 1 clove garlic, minced
  • 1 dried chilli, finely chopped, optional
  • Pinch dried herbs
  • 15g parmesan cheese, grated 
  • 2 eggs
  • 1 tbsp oil

Instructions

  1. Cook potatoes in boiling salted water for 10-15 minutes or until just cooked then drain and leave to cool for 5 minutes
  2. Fry the potatoes in the oil over a medium heat for 2-3 minutes until crispy
  3. Add the peppers and fry for 1-2 minutes
  4. Add the spinach, garlic, chilli and herbs, season with salt and pepper and cook for 30 seconds until spinach is wilted
  5. Make 2 spaces in the pan, crack in the eggs, top with the parmesan cheese and cook under the grill for 2-3 minutes until the eggs are cooked (see notes)

NOTES

  • If you don’t have a grill, cover with a lid and cook on a low heat until the eggs are cooked
  • You could bake the eggs in the oven too
