Potato & Egg Hash – 495 Calories
Ingredients

- 200g potato, cut into small cubes
- 80g bell pepper, diced
- 50g spinach
- 1 clove garlic, minced
- 1 dried chilli, finely chopped, optional
- Pinch dried herbs
- 15g parmesan cheese, grated
- 2 eggs
- 1 tbsp oil

Instructions
- Cook potatoes in boiling salted water for 10-15 minutes or until just cooked then drain and leave to cool for 5 minutes
- Fry the potatoes in the oil over a medium heat for 2-3 minutes until crispy
- Add the peppers and fry for 1-2 minutes
- Add the spinach, garlic, chilli and herbs, season with salt and pepper and cook for 30 seconds until spinach is wilted
- Make 2 spaces in the pan, crack in the eggs, top with the parmesan cheese and cook under the grill for 2-3 minutes until the eggs are cooked (see notes)
NOTES
- If you don’t have a grill, cover with a lid and cook on a low heat until the eggs are cooked
- You could bake the eggs in the oven too
