Chicken With Mango & Habanero Salsa – 508 Calories

  • 300g chicken drumsticks, skin on
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 spring onion, finely sliced
For the salsa (makes 2-3 portions)
  • 2 habaneros, or less if you prefer
  • 1 clove garlic
  • 15g onion
  • 100g ripe mango
  • 15 mint leaves
  • 3g ginger, minced
  • 1 tsp honey
  • 2-3 tbsp water

Instructions

  1. Pre heat air fryer to 380 fahrenheit
  2. Mix the chicken with the smoked paprika, onion & garlic powder, season with salt
  3. Air fry or roast for 10 minutes, turn them then cook for 15-20 minutes more until cooked
  4. Meanwhile, dry roast the onion, garlic and habanero in a dry pan until blackened
  5. Add them to a blender with the mango, mint, ginger, honey & water and blend
  6. Season to taste with salt. If it’s too thick, add a little extra water
  7. Serve on a plate with the spring onion on top and salsa on the side

NOTES

  • You can use skinless chicken to reduce calories
  • You can use less or no habanero if you don’t like spicy
