Chicken Burger & Coriander Mayo – 476 Calories

Ingredients

  • 140g chicken mince
  • 1/2 tbsp onion powder
  • 1/2 jalapeño, blackened & chopped (see notes)
  • 1 clove garlic, blackened & chopped
  • 10g panko breadcrumbs
  • 1 small burger bun (60g)
  • Lettuce
  • 1-2 spray oil 
For the mayo (makes 4 portions)
  • 100g mayo, reduced fat
  • 2-3 tbsp coriander
  • Lemon juice, to taste
  • Spring onion, finely sliced
  • 2 tbsp water

Instructions

  1. In a bowl, mix the chicken mince with the onion powder, garlic, jalapeño and season lightly with salt and pepper
  2. Wet your hands and form the shape of the burger
  3. Put the panko breadcrumbs on a plate and press the burger into it then turn over and coat the other side in the breadcrumbs
  4. Cook in a pre heated air fryer and 380 farenheit for 5 minutes, flip it and cook for 5 minutes more
  5. Meanwhile, blend the mayo, coriander and lemon juice with a little water until smooth then add the chopped spring onions
  6. Toaste the bun, top with the burger, some mayo and lettuce

NOTES

  • You can blacken the garlic and jalapeño in a dry pan or comal over a medium heat for 10 minutes. Or you can add it raw instead.
  • You can top the burger with other vegetables (cucumber, tomato, onion) etc
  • If you don’t have an air fryer, you can fry in a little oil in a pan
