Bacon & Mushroom Hash – 378 Calories

  • 50g (2 slices) streaky bacon, thinly sliced
  • 80g mushrooms, quartered
  • 50g red onion, diced
  • 1/2 sprig rosemary, finely chopped
  • 1 clove garlic, minced
  • 120g potato, diced into 1cm cubes
  • Chilli to taste, optional
  • 2 eggs
  • Spring onion, finely sliced
  • 1 tbsp sriracha

Instructions

  1. Cook potatoes in boiling salted water for 5-7 minutes until cooked but not mushy
  2. Pre heat a large pan, add the bacon, onions & mushrooms and fry over a medium heat for a few minutes
  3. Add potatoes, garlic, chilli and rosemary and fry for 2-3 minutes until lightly crispy, season lightly with salt and pepper
  4. Make 2 holes in the hash and crack the eggs in, cover with a lid and cook on low for 2-3 minutes or until eggs are cooked to your liking
  5. Drizzle over some sriracha and top with the he spring onions
