Achiote Salmon – 549 Calories

  • 130g salmon fillet, skinless 
  • 10g achiote (see notes)
  • 20g fresh orange juice (half an orange)
  • Squeeze lime
  • 1/2 tbsp oil
  • 50g quinoa, rinsed 
  • 150ml water
  • 30g corn, fresh or frozen 
  • 50g bell pepper, diced 
Cucumber salad
  • 50g cucumber, diced
  • 50g tomato, diced
  • 1 spring onion, finely sliced 
  • Tbsp chopped coriander
  • Lime juice to taste

  1. Put the water and quinoa in a small boil and cook over a medium low heat until quinoa is cooked (15-20 minutes)
  2. Meanwhile, in a small bowl, mix the achiote with the orange juice and a squeeze of lime, add the salmon, mix and leave for 5-10 minutes
  3. Once the quinoa is cooked, remove from heat and add the corn, bell pepper and season to taste
  4. Season the salmon with salt and fry in the oil in a small pan for 3-4 minutes each side over a medium low heat (cooking time depends on thickness of the salmon
  5. Mix the cucumber, tomato, spring onion, coriander & lime juice in a bowl and season to taste
  6. Serve the quinoa in a bowl with the cucumber salad and salmon and garnish with lime wedges
