Turkey Bacon Omelette – 287 Calories

  • 4 slices turkey bacon, thinly sliced
  • 2 medium eggs, whisked
  • 50g bell pepper, diced small
  • 1 spring onion, finely sliced
  • 10g butter, divided in 2

Instructions

  1. Fry the turkey bacon, pepper and spring onion in half the butter for 2 minutes until cooked, remove and set aside
  2. Add the remaining butter to the pan, add the eggs and cook the omelette for a minute
  3. Once the omelette is almost cooked, add half the turkey & peppers to the centre and use a spatula to roll the omelette closed, serve on a plate and top with the remaining turkey and peppers
