Shrimp fettucine in spinach & parmesan sauce – 450 Calories

  • 100g shrimp, de veined 
  • 70g Fettucine, or other pasta 
  • 40g spinach
  • Small handful coriander
  • 10g toasted pecan nuts
  • Jalapeño to taste, optional 
  • 1 clove garlic
  • 70g broccoli
  • 5g parmesan, grated


  1. Cook pasta in boiling salted water
  2. Add the spinach, toasted nuts, jalapeño, coriander, garlic & parmesan to a blender with half a cup of the water from the pasta, season with salt & pepper & blend until smooth
  3. When the pasta is almost cooked, add the broccoli and once cooked, drain both
  4. Pour the sauce in a small pan and once boiling add the shrimp and cook for 1 minute
  5. Add the pasta and broccoli, cook for a minute more then season to taste and serve
  6. Top with a little extra grated parmesan cheese
