Shrimp brochetas with basil chimmichurri – 207 Calories

  • 100 grams prawns (6 medium) peeled and de veined
  • 50 grams bell pepper, cut into small cubes
For the chimmichurri 
  • 6-8 basil leaves
  • 1 tbsp coriander
  • 1/2 chilli, de seeded, optional
  • 1 garlic clove, finely chopped
  • 1 tbsp olive oil
  • 1 tsp red wine vinegar, or to taste
  • 2 small wooden skewers


  1. Blend the ingredients together for the chimmichurri and season to taste
  2. Push a piece of pepper on the skewer then a shrimp and repeat this until you have two brochetas
  3. Spoon over 1 tbsp of the dressing on the brochetas and mix well
  4. Pre heat a grill pan and once smoking hot, season the brochetas with a little salt and cook in the pan for 2 minutes each side until cooked
  5. Serve on a plate and spoon over the remaining dressing


  • You could serve with salad, extra vegetables and carbs
