Ham & White Bean Soup – 414 Calories

Ingredients

  • 175 grams cooked ham, lean
  • 200 grams white beans, dried and pre soaked
  • 100 grams onion, diced small
  • 100 grams carrot peeled & diced small
  • 175 grams courgette, diced small
  • 1 clove garlic, minced
  • 6-7 dried chillies, optional
  • 1 litre chicken broth, fresh or from powder
  • 1/4 tsp dried oregano
  • 1 tbsp oil
  • 1 chopped chilli, optional
  • 3 tbsp coriander, finely chopped
  • 3 pieces lime

Instructions

  1. Fry the onion and carrot in the oil over a medium heat for 2 minutes until softened
  2. Add the courgette, garlic and ham and fry for 2 minutes until ham is a little crispy
  3. Transfer everything to a pressure cooker pot, add the broth, oregano, chillies and a pinch of pepper and mix well
  4. Cook on the soup setting on high for 25 minutes
  5. De pressurise, remove the lid, taste the soup and adjust the seasoning
  6. If serving straight away, garnish with coriander, chilli and lime

NOTES

  • Try to buy a good quality ham as it’ll improve the taste a lot
  • You can use different vegetables
  • This can be frozen and used within a month
  • You can soak the beans over night for 10-12 hours or quick soak them by putting them in a pot of water with 2 times the volume of water, bring them to a boil then turn off the heat and leave them for an hour
  • Can be kept in the fridge and eaten within 4-5 days and re heated on the stove or microwave
