Creamy Chicken & Pepper Pasta – 499 Calories

  • 100g skinless chicken breast
  • 65g penne pasta
  • 170g bell pepper, diced
  • 70g broccoli
  • 30g onion
  • 2 cloves garlic
  • 25g single cream
  • 5g parmesan, grated
  • 1 tbsp parsley, chopped
  • 1 spray oil


  1. Put the chicken, garlic, onion and peppers on a tray, lightly spray with oil, season with salt and grill for 5 minutes each side until chicken is cooked then remove. You can leave the vegetables a little longer until softened
  2. A couple of minutes before the chicken is ready, cook the pasta in boiling salted water
  3. Blend the pepper, onion, garlic and cream with half a cup of the water from the pasta
  4. Once the pasta is almost cooked, add the broccoli and cook for 2 minutes then drain
  5. Mix the pasta, broccoli and sauce in the pot and add the diced cooked chicken breast, the parsley and season the taste with salt and pepper
  6. Serve in a bowl and sprinkle over the parmesan cheese
