Chipotle Beef – 279 Calories

  • 500 grams ground beef (95/5)
  • 100 grams white onion, diced small
  • 300 grams bell pepper de seeded and diced (2 small peppers)
  • 75 grams chipotles in adobo sauce or fresh chilli to taste
  • 400 grams canned tomatoes
  • 300 ml water or beef broth
  • 2 cloves garlic, finely chopped
  • 1 tbsp oil
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano


  1. Heat oil in medium size pot and cook beef until dark brown, this takes 6-8 minutes
  2. Add the onions and peppers and cook for 2-3 minutes
  3. Meanwhile, blend the tomatoes, paprika, cumin, oregano, garlic & chipotles until smooth
  4. Add the tomato mixture to the beef, the water or broth, season lightly with salt, cover with a lid and gently simmer for around 30 minutes, stirring occasionally
  5. Once cooked, adjust seasoning to taste


  • This can be made in bigger batches, frozen and used within a month
  • You can serve as it is or with your preferred choice of carbs
  • This makes it medium spiced, if you prefer less spicy, add less or no chilliĀ
