Chicken & Lentil Salad – 478 Calories

Ingredients

  • 375 grams chicken breast, skinless
  • 150 grams dried brown lentils, rinsed under water
  • 600ml water, to cook lentils
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 clove garlic, finely chopped
  • 1 tbsp Dijon mustard
  • 1/2 tsp Italian herbs
  • 1 tbsp lemon juice
  • 3 tbsp oil
  • 150 grams cucumber, diced small
  • 3 tbsp parsley, finely chopped
  • 1 spring onion, finely sliced
  • 1/4 tsp oregano, small pinch
  • 60 grams feta cheese, crumbled

Instructions

  1. Mix mustard, garlic & onion powder, a little pepper, herbs, lemon juice and 1 tbsp oil in a bowl
  2. Put chicken between 2 pieces of baking paper and use a heavy object like a pan to bash out the thicker part
  3. Add the chicken to the marinade, mix well and leave for 20-30 minutes
  4. Transfer chicken to a baking dish and roast in pre heated oven at 200 degrees (400 Fahrenheit) for 15-20 minutes or until cooked
  5. Meanwhile, in a small pot, add the water and lentils, cover with a lid and gently simmer for 15-20 minutes until cooked then run them under cold water to cool them down
  6. Blend the remaining oil, garlic, oregano, and lemon juice with a little salt and pepper
  7. Combine the lentils with the dressing, cucumber, spring onion & feta and season to taste
  8. After chicken has rested for 5 minutes, slice and serve in containers on the lentil salad

NOTES

  • If making as meal prep, don’t mix the cucumber with the dressing. Serve the cucumber on the side instead. If you mix with the dressing they’ll go soft.
  • Chicken could be changed for another protein source
  • You can leave the chicken to marinate for 30 minutes or cook straight away
  • this will stay fresh in the fridge for 3-4 days
