Beef & Potato Stew – 406 Calories
Ingredients

- 450g stewing beef, cut into chunks
- 150g pepper, diced
- 150g onion, diced
- 100g carrot, diced
- 450g potato, cut into similar size as the meat
- 10g flour
- 2 tbsp Worcestershire sauce
- 1 tbsp oil
- 500ml beef stock
- 4-5 bay leaf
- 1/2 tsp dried mixed herbs
- 2 cloves garlic, finely chopped
- 100g blended tomatoes
- Chilli to taste, optional
Instructions
- Fry beef in the oil for 5-7 minutes until well browned
- Add the onions and carrots and cook for 2 minutes
- Add garlic, bay leaf, chilli and season with salt and pepper, fry for 30 seconds
- Add flour, cook for 20 seconds
- Add the beef broth, blended tomatoes, worcestershire sauce and peppers, mix well then transfer to pressure cooker (see notes)
- Add the potatoes, mix well and cook on stew setting on high for 45 minutes
- Season to taste and serve as it is or with extra vegetables
NOTES
- If you don’t have a pressure cooker, transfer to an oven safe dish and cook in the oven at 360 farenheit for 2-2.5 hours. Check after an hour and add a little extra broth if it’s a little dry
