Banana & Oat Pancakes – 429 Calories

  • 50 grams oats
  • 1/4 cup coconut milk, reduced fat
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon powder
  • 1/2 tsp vanilla extract
  • 1 medium egg
  • 100 grams banana, save a few slices for garnish
  • 2 sprays oil or tsp oil
  • 1/2 tbsp honey or agave syrup


  1. Blend the oats in a small blender until smooth
  2. Add the banana, coconut milk, cinnamon, baking powder, egg & vanilla to a blender and blend until smooth
  3. Heat a large pan and spray with the oil, once hot, add the pancake mixture and divide between 3-5 pancakes depending on the side of your pan
  4. Cook for 30-45 seconds over a medium heat and use a fish slice to flip them, cook for 20-30 seconds more
  5. Serve on a plate with a few slices of banana on top and drizzle over the honey


  • Save a few slices of banana for garnish
  • You could use other nut milks or normal milk instead of coconut milk
  • If the mix is too thin, add a little more oats, if the mix is too thick, add a little extra milk
