Banana & Oat Pancakes – 429 Calories
Ingredients

- 50 grams oats
- 1/4 cup coconut milk, reduced fat
- 1/4 tsp baking powder
- 1/4 tsp cinnamon powder
- 1/2 tsp vanilla extract
- 1 medium egg
- 100 grams banana, save a few slices for garnish
- 2 sprays oil or tsp oil
- 1/2 tbsp honey or agave syrup
Instructions

Blend the oats in a small blender until smooth

Add the banana, coconut milk, cinnamon, baking powder, egg & vanilla to a blender and blend until smooth

Heat a large pan and spray with the oil, once hot, add the pancake mixture and divide between 3-5 pancakes depending on the side of your pan

Cook for 30-45 seconds over a medium heat and use a fish slice to flip them, cook for 20-30 seconds more

Serve on a plate with a few slices of banana on top and drizzle over the honey
NOTES
- Save a few slices of banana for garnish
- You could use other nut milks or normal milk instead of coconut milk
- If the mix is too thin, add a little more oats, if the mix is too thick, add a little extra milk
