Baked Ginger Chicken – 326 Calories

Ingredients

  • 400 grams chicken breast, skinless
  • 250g broccoli, cut into small pieces
  • 1 chilli, finely chopped (optional)
  • 10 grams ginger, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tbsp honey
  • 1 tbsp toasted sesame oil
  • Juice of 1/2 lemon
  • 2 tbsp soy sauce
  • 1/2 tsp corn starch
  • 1/2 tsp water

Instructions

  1. Pre heat oven to 200 degrees Celsius or 400 Fahrenheit
  2. Put the chicken between 2 pieces of baking paper, use a heavy object to bash the thicker part until it’s an even size
  3. Combine the chilli, ginger, garlic, honey, sesame oil, lemon juice & soy sauce in a bowl, add the chicken breast, mix well and leave for 10 minutes whilst the oven pre heats
  4. Place chicken on a baking tray and reserve the marinade then bake for 15 minutes or until the chicken is cooked
  5. Meanwhile, steam the broccoli until just cooked then put into ice cold water to stop it over cooking
  6. Once the chicken is cooked, pour the juices that have come out into a small pot with the marinade and leave the chicken to rest for 3-4 minutes
  7. Bring the marinade to a boil over a high heat
  8. Mix the corn starch with the water until smooth then add to the pot, bring to a boil and remove when it’s thickened up (see notes)
  9. Slice chicken and divide between 3 meal prep containers with the broccoli and spoon the sauce onto the chicken 

NOTES

  1. If the sauce is too thick, you can add a little more soy sauce or water to thin it a little
  2. Broccoli could be swapped for your preferred vegetables
  3. You could serve this with rice or your preferred carbs 
  4. It’s important the marinade is boiled before adding the corn starch as it’ll kill the bacteria
